The high valley of Chiampo has a strong tradition in the field of trout, thanks to the waters of the highest standard and breeders of proven competence. The farmed species are the brown trout of the local strain and rainbow trout. This activity takes place specifically within the plants watered by the waters of Chiampo and its tributaries in the area of Altissimo.

The specimens placed on the market are marked by a plate with the mark of De.Co. inserted in the gills. A similar mark will be placed on the packaging of processed meats. In addition to the portioned fish, even trout weighing less than 120 grams is expected to be released for consumption, as destined for frying.
