The whole mountain range of Veneto is a district of widespread production of charcuterie, but one common, the Valli del Pasubio, has specific reputation for the product that best represents this tradition, the soprèssa, a sausage exceptional due to its size and ingredients. The production is protected at the provincial level by the Community trade mark of Denominazione di Origine Protetta (Denomination of Protected Origin, DOP) «Soprèssa Vicentina», but Valli del Pasubio felt the responsibility to defend its secular tradition further by distinguishing the soprèssas of its five handicraft companies with a special Denominazione Comunale (Municipal Designation).

Moving on from the Valleys one can immediately distinguish the displays, which the producers have set up along the street in honour of soprèssa, a traditional souvenir from a trip to Pasubio. The best opportunity to get to know this product is still the Festival of Soprèssa, which for over forty years has attracted in August thousands of fans.
