For several years the inhabitants of Tonezza have stood out for their commitment to recovering mountain agriculture, starting from potatoes, which are able to grow amazingly on those glacial terrains.
In this framework Tonezza stands out for its decision to protect a traditional dish, the "Patona", a sort of polenta made with potatoes and flour, topped with fried onion and pork cracklings, to be eaten soft with a spoon or roasted on the grill, with sausage and sauerkraut in cold seasons, or with eggs and field salad in spring.
