Mount Faldo is the first summit of the ridge of Lessinia, which marks the watershed between the valleys of Agno and Chiampo: 807 meters above sea level one will still find a woody vegetation, which is historically reflected in the name of Selva di Trissino. Where the hilly terrain was cleared to make room for fields, the environment is ideal for horticulture due to the nature of the soil, mostly of volcanic origin, thus very mineralized, as well as the climate refreshed by the currents, which descend from the Little Dolomites, and with adequate summer rainfall.
The temperature range between day and night favours in one hand the concentration of starch, the noble element of potato, preventing on the other hand the accumulation of water. The production has been documented since the early nineteenth century, and today it is still entrusted to family farms, which practice a traditional type of activity with natural fertilizers, and use crop rotation to get the best out of the ground.
The currently produced varieties are Bintje, Kennebec, Desirèe, Monalisa, Kurova and Vivaldi, which together cover all the needs: from gnocchi, which require floury potatoes, to salads, with potatoes of opposite characteristics. The produced quantity amounts to 1200 tons per year, with an encouraging increase in the most recent years. It means the main produce, which will be marketed in sizes between 4,5 and 15 cm, in the bags labelled with the logo of Denominazione Comunale (Municipal Designation).
