The tradition of the production of medicines, potions, and even alcoholic beverages, is historically a part of the painstaking work in the dungeons of convents of different religious orders in every part of Italy and beyond. The Girolimini brothers also followed this custom, which however had not been certified at least until 1892, when, as Renato Zanella reports, Mr Francesco Zanella, the producer of Birra Real Summano of Rocchette, bought the whole land of the friars in Piovene, inhabited for centuries by the Girolimini monks. During the restoration of the abandoned site, some workers discovered a breviary, in which they found a handwritten recipe for herbal liqueur. Zanella, having heard about the return of the friars to Santorso, gave it to Luigi De Stefanis, the first Prior of the Girolimini.

The friar, not being able to produce the said liquor, relied on the expert hands of two pharmacists from Schio: Dr Marco Saccardo and his successor Dr Cesare Zanella, who perfected the recipe and presented it with considerable success at international exhibitions of the period. Around the 30s the recipe was back in the hands of the Girolimini, who continued the production until 1948, when Brother Francesco Gruba, finally passed the recipe and the production to Renato Zanella, who continued it until 1991.

Now the Girolimino returns to its original version to renew a tradition that has been disappearing. It is revived with care and passion, which should rightly be reserved for a pearl in the history of the people, who live at the foot of Mount Summano.
