A cooperative dairy plant and a large number of private stables make Altissimo a pole of particular interest for the maintenance of the production of traditional nature, which is still linked to the practice of pasturage.

The product specification insists first of all, that the cows are fed in the summer preferably in the pastures, and with local hay during winter, without any need for stored feed. The wheels with a diameter of between 32 and 37 centimetres, and weighing 8-12 kilogrammes, are imprinted on the bottom with the symbol "ALT" and the name of the producer or of the pasture.

The organoleptic characteristics are accentuated with the continuation of maturing, which can easily exceed one year, when the branding of wheels is expected.
